This month we celebrate Christmas with our chai Christmas special. This not your typical chai. Instead of CTC Assam we're going to use Ceylon leaves of the best quality we have available. For the spice mix we'll use cloves and nutmeg but we'll replace cinnamom with hot pepper, almond and strawberry. Hot pepper should be used fresh (less spicy) and dosed very carefully, just a dust. Finally, we add small sugar crystals (at pleasure) into the mix.
This tea is meant to be enjoyed in winter, alone or with a selected few of your loved ones.
General information: Chai style Christmas Ceylon
Composition: Ceylon black tea, sugar crystals, cloves, almond, strawberry, hot pepper, nutmeg.
Temp: 100°C.
Quantity: 1 teaspoon for cup.
Time: 3 minutes for Western Style. Grandpa style is also recommended.
Sugar should not be added.
